What is Kombucha?

Kombucha is a detoxifying and energizing elixir, made from sweetened black or green tea and cultured with a SCOBY (symbiotic culture of bacteria and yeast). A SCOBY is also referred to as a 'mushroom', due to its shape and texture, or a culture. It is often also called a mother because it reproduces itself during the process of fermentation.


Kombucha is thought to have originated in China or Russia. It has become very popular in the United States, and now bottled Kombucha drinks can be purchased at most health food stores.  Through our fermentation workshops we will provide you with your very own SCOBY so you can brew Kombucha at home. It is cheaper and extremely satisfying to witness and taste-test along the way (as are most ferments)!  Kombucha SCOBY babies also make great gifts!
